Pork Saltimbocca

1 Turkey breast tenderloin cut in half
Pepper, garlic salt and flour to toss turkey in
2 TBSP butter, yes butter
1 1/2 tsp olive oil
3-5 slices proscuitto to your taste cut into small strips
2TBSP minced fresh sage
1/4 cup great tasting white wine or chicken broth

Flatten each half of tenderloin to 1/2" thickness
Add turkey to seasoned flour.
Melt 1TBSP of butter and 1 TBSP of oil in skillet over med. heat. Cook turkey 3-4 min on each side until no loner pink. Remove and keep warm.

In same skillet sauté procuitto and sage in 1 1/2 tsp butter until slightly crisp. Add wine and stir to loosen bits in pan. Bring to boil, cook until slightly reduced. Remove from heat, stir in remaining butter, serve on turkey.

This is fabulous with roasted veggies or baked sweet potatoes and a salad.

You can also make this with chicken or veal also... Making for more than 2 people just double it.

Fall Weather

I LOVE LOVE LOVE Fall--- It is my very favorite season of all.  I love the colors, the smells, and the weather.  I don't mind that it gets cooler, I Hate winter though--- strange huh.  Fall just has a cozy feel with it that I love.  The food that is inspired by fall weather is my favorite.  Roasted veggies, crockpot 's full of great smelling food and the the desserts.  Apples, Pumpkins and Pecans oh my--- I love them all as you could tell.

Fall also brings about craft shows-- I have already missed the Fair Grove one last weekend, but this weekend is Ozark's Craft show and I will for sure try to make that one.  It's sad that craft shows are not like the ones that my parents used to be in though...... (cue retro memory music now please).....

Back in the late 70's and early 80's when my parents was really into having booths in craft shows we used to go all over Missouri in the summer and fall.  Crafts were actually hand crafted, not pre-made crap that most people sell now.  People took pride in their crafts and it was so much fun.  We would trade items with other vendors and I would have the run of the show.  A lot of the vendors would go to the same shows as my parents so by the end of the season I would know who was fun and who was mean.  My parents also did my very favorite show of the season which was the Silver Dollar Crafts festival.  I would be able to go and spend all day long at Silver Dollar City with another girl whose parents shared a booth with mine at a lot of the shows.  Of course these days it would not be safe to let a 10 year old have the entire Silver Dollar City park at their disposal, but back then it was WONDERFUL.  I have great memories from my childhood that revolve around fall activities so it doesn't take Freud to figure out that would most likely be my favorite.

I love Fall and will post a fabulous recipe for dinner tomorrow--- stay tuned-- Pork Saltimbocca with roasted veggies and of course a fab-o dessert.

First day of blogging

Today I embark on a new journey-- Blogging.  I have never read blogs, nor have I written a blog so let us learn together.  I have been doing a lot of new things lately and hope this works out as well as they have.  Currently I am helping my mother in law with a new project-- she bought a website.  I have been learning to do the webdesign as well as about cool nerdy things like SEO's and RSS feeds--- and now you are jealous.

You will find taht I am a bit of a sarcastic old broad, well I'm not really old, but some days feel like I am 100..... really I just turned 40 this year.  I believe that is why I have started learning new things and trying new things instead of worring about not being able to do something new.  It's not like I have my finger on the atom bomb or something.....

I also love to cook and write recipes.  I will randomly let you in on something I have been working on or have an idea about trying-- give me your feed back   We will have fun no matter what the subject.

Randomly I will just ramble about my family-- at least it will be good for a laugh.

Can't promise that it will be an everyday post, but I will try to.
